The subject of foraging, wild food and ethnobotany is vast and can be complex to tackle. The level of engagement can range from those interested purely from a culinary and kitchen application to survival and 'living from the land'.
We work with clients of all types to develop realistic and relevant survival training courses based on case studies, and the extensive experience of our team of instructors.
We deliver courses both as part of the EST Framework and as tailored training packages to meet the individual needs of our clients.

Level 1 EST Foraging Courses

(Level 1) Inland Foraging Basics

A Level 1 EST Framework entry-level inland foraging course covering the basics of foraging in the fields and woodlands of the U.K.

Subjects covered over 1 day include:

  • Identification of common and safe edible wild plants, trees and fungi
  • Foraging throughout the seasons
  • Identification of toxic or dangerous species
  • UK foraging laws and ethical considerations
  • Equipment choice and use (including guidebooks and harvesting equipment)
  • The laws on carrying knives and edged tools in the U.K.
  • An overview on shooting and fishing laws in the U.K.
  • Staying safe
This course is delivered over one day and entirely outdoors.
It can be delivered on site with the client (assuming a suitable location can be provided) or with us in North Wales.

There are no training pre-requisites for this course but a minimum level of basic fitness and health is required.
This course can be tailored to meet a client specification, or combined with other courses as a bespoke training package.

(Level 1) Coastal Foraging Basics

A Level 1 EST Framework entry-level coastal foraging course covering the basics of foraging on the shores of the U.K.

Subjects covered over 1 day include:

  • Identification of common and safe edible wild plants and seaweeds from the British Coast
  • Reading the Beach - where you are likely to find wild edibles on the coast of the UK
  • Identification of edible crustaceans, molluscs and bivalves
  • Identification of toxic or dangerous species
  • Basic sea fishing for UK waters (including equipment choice and basics of casting)
  • UK Coastal foraging laws and ethical issues (including MLS (Minimum Landing Size) and seasonal restrictions)
  • Equipment choice and use (including guidebooks and harvesting equipment)
  • Safety near water and potential environmental hazards
  • Emergency techniques
This course is delivered over one day and entirely outdoors.
It can be delivered on site with the client (assuming a suitable location can be provided) or with us in North Wales.

A Level 2 EST Framework that covers many aspects of foraging for wild food in the woods, fields and the riverbanks of the U.K.

Subjects covered over 3 days include:

  • Identification of edible, medicinal and useful wild plants, trees and fungi
  • Hunting, trapping and fishing in various forms
  • Identification of toxic and potentially hazardous species
  • Basic cooking and preparation of wild food, including game
  • Cooking over camp fires
  • Equipment choice and use (including guidebooks and harvesting equipment)
  • Safety near water and potential environmental hazards
  • Staying safe
This course is delivered over three day and entirely outdoors.
It can be delivered on site with the client (assuming a suitable location can be provided) or with us in North Wales.

There are no training pre-requisites but we recommend that you have attended our L1 Inland Foraging Basics course for this course but a minimum level of basic fitness and health is required.

(Level 2) Coastal Foraging Practitioner

A Level 2 EST Framework course that covers many aspects of foraging on the shores of the U.K.

Subjects covered over 3 days include:

  • Fishing in various forms, including long lines and rods
  • Pots and traps
  • Edible seaweeds and their preparation
  • Crustaceans, bivalves, molluscs and their preparation
  • Cooking over camp fires
  • Coastal foraging throughout the year
  • Toxic and potentially hazardous species
  • Prevention and treatment of hypothermia and other environmental hazards
  • Safe use of knives
  • Equipment choice and use
  • Signalling for help and preparing for rescue
  • Emergency techniques and staying safe
This course is delivered over three days and entirely outdoors.
It can be delivered on site with the client (assuming a suitable location can be provided) or at our site in North Wales.

We recommend that those attending this course have previously attended our L1 Coastal Foraging Basics course or equivalent. A minimum level of basic fitness and health is also required.

A Level 2 EST Framework course covering the subject of cooking and preparing wild plants, game and other food over open fires and in improvised stoves.

Subjects covered over 2 days include:

  • Firecraft and fire management
  • Making kitchen tools and utensils
  • Making improvised stoves and ovens
  • Food hygiene and safety in a camp environment
  • Equipment choice
  • Baking and bread making
  • Basic carving
  • Game preparation
This course is delivered over two days and entirely outdoors.
It can be delivered on site with the client (assuming a suitable location can be provided) or with us in North Wales.

There are no training pre-requisites for this course but we recommend that you have previously attended one of our L1 Foraging courses, such as the L1 Inland or Coastal Foraging Basics.
A minimum level of basic fitness and health is required.

This course includes an assessment.

Subjects covered over 5 days include:

  • Identification of wild plants, trees and fungi throughout the year
  • Firecraft and fire management
  • Protein acquisiton - hunting, shooting and fishing in theory and practice
  • Cordage, medicine and other aspects of ethnobotany
  • Use of guidebooks, field guides and keys
  • UK laws and ethical issues
  • Equipment choice and use
  • Strategies for long-term foraging and living from the land
  • Pickling, drying, smoking and preservation of wild food
  • Emergency techniques
This course is delivered over five days and entirely outdoors.
It can be delivered on site with the client (assuming a suitable location can be provided) or at our site in North Wales.

Those attending this course will need to have completed our L2 Inland Foraging Practitioner AND our L2 Wild Food and Camp Cooking Courses. A minimum level of basic fitness and health is also required.

Those attending this course will need to have completed our L2 Coastal Foraging Practitioner AND our L2 Wild Food and Camp Cooking Courses. A minimum level of basic fitness and health is also required.
